Mexican Grilled Chicken Breasts

This is a nice simple recipe for those nights you are looking for something quick to grill.  I like to have small batches of spice rubs created just for this case.  I had 4 chicken breasts in the refrigerator that needed to be cooked up and a batch of my Mexican rub in the spice pantry.  The result was a very flavorful chicken breast that can be eaten alone with a salad for a nice healthy meal, or as a chicken sandwich with some tomato, lettuce, onion, and some mayonnaise.  Either way it is a winner.

Ingredients:

  1. 1 tablespoon Jay’s Mexican Rub
  2. 4 chicken breasts

Instructions:

Spread the rub over the chicken breasts and place back in the refrigerator for about 2 hours.  Prepare the grill for medium direct grilling and place chicken on the grill.  Turn over when you believe the chicken is about 1/2 done and continue grilling until juices run clear.

Where do you find so much self control?

You always cook these amazing dishes and always find time to grab the camera and get pictures. I’m a fat kid, I would have downed that chicken before you could get the camera in focus!

Needing a quick recipe for chicken breasts, I came across yours and thought I hit the gold mine. That is, until, I saw there was no recipe for the Mexican Rub. What’s up with that?
