I have disappeared again for a couple weeks. At least this time it wasn’t one of those busy, hectic times that are no fun. This time was all play and no work. Finally had a chance to take a vacation out to Southern California, Las Vegas, and the Denver Colorado area visiting friends and family. We spent a week of the vacation out in Southern California with family where I was able to get some grilling in. I was able to make an extremely large batch of grilled chicken and pork tacos.
Ingredients:
- 2 teaspoon whole Mexican Oregano, crushed
- 2 teaspoon dried cilantro
- 2 teaspoon ground cumin
- 3 teaspoons chili powder
- 1 teaspoon granulated onion powder
- 1 teaspoon granulated garlic
- 1 teaspoon lime salt
- 3 teaspoon smokey sweet pepper seasoning
- Chicken breasts
- Pork steak
- Tomatoes, diced
- Cilantro, chopped
- A good Mexican cheese
- Lettuce
- Guacamole
- Sour Cream
- White corn tortillas, warmed up
Instructions:
- Make the rub by mixing the first 8 ingredients together in a bowl
- Rub the spice mixture into the chicken breasts and pork steaks
- Prepare the grill for medium direct grilling.
- Place the chicken and pork steaks on the grill, and grill till completely cooked, flipping the meat once about half way through cooking.
- Remove the meat from the grill and dice up the chicken and pork, and place in separate bowls.
- Place the remaining ingredients into separate bowls
- Let people form their own tacos.










Looks great! I always like the fun, communal spirit that evolves when guests help out a little with food preparation.

Wow that really is a large batch. What do you recommend as a good Mexican cheese? Something like Chihuahua cheese?
