This zucchini was an amazing tasting recipe and probably one of my new favorites. Besides an amazing taste, it was incredibly easy to put together. Every time I post a grilled vegetable recipe, I always say how wonderful vegetables are on the grill, and to keep sounding like a broken record, zucchini is no exception to it, so much taste is brought out by grilling zucchini! This is also one of those dishes that would be great for a party as a main or side dish.
Ingredients:
- 4 zucchinis
- 1/2 cup sour cream
- 1/4 cup red onion, diced
- 1/4 cup Italian parsley, chopped
- 1 cup shredded pecorino cheese
To make start by splitting the zucchinis in half lengthwise and core out the insides of the zucchini (keep the insides). The zucchini “boats” should be about 1/4 inch thick all around.
Take the pulp from the inside of the zucchini and chop up, place in a mixing bowl. Add in red onion, parsley, sour cream, and mix well.
Take the filling and scoop back into the zucchini “boats”
Now spread the pecorino cheese over the top of the stuffed zucchinis
Place the stuffed zucchini on the grill with medium indirect heat (but just around the border of the fire)
Grill the zucchini till the cheese is fully melted and starting to bubble a little.

These are definitely one of my favorite things to eat! Zucchini are usually so plentiful (and cheap) so this is a great and delicious way to use them up.

These were the best ever. I LOVE zucchini, and we’ve made stuffed zucchini before, but these were by far the best. The lobster he made this weekend was great, without a doubt, but I think I almost liked these the best out of everything he made this past weekend. Maybe it was the pecorino…I think the kids would have liked the flavor of these just fine, but he’s right, the only green veggie they will touch is celery – everything else they will literally get up from the table and run. Maybe if we blindfolded them….then they wouldn’t know they were eating a green veggie…lol.
