The first step is to make marinade for the shrimp. To do this mix together the beer, olive oil, chives, Sriracha sauce, salt, and garlic in a bowl and mix well.
Place the shrimp in the bowl and let marinate for at least 1 hour, and preferably 2 hours.
As time gets closer, prepare the grill for direct medium grilling. Remove the shrimp from the marinade and skewer the shrimp. It works best to put the skewer through the tail and the head of the shrimp. This will help flipping the shrimp over during grilling.
Place the shrimp directly over the heat on the grill and let cook 3 to 5 minutes. Flip over the shrimp and grill for another 3 to 5 minutes or until the shrimp is opaque and cooked thoroughly.
Remove from the grill and serve over a bed of garlic fried rice.
To make the garlic fried rice, mix together the fish sauce and soy sauce in a small bowl. Heat the olive oil in a skillet at medium high heat, add in the cooked Jasmine rice and the soy-fish sauce mixture. Add in the garlic to the rice mixture stir well and constantly for about 5 minutes.
Shrimp Ingredients:
- 2 lbs jumbo raw shrimp
- 1 bottle beer (use your favorite, I used blue moon)
- 2 tablespoons olive oil
- 4 teaspoons chopped fresh chives
- 1 teaspoon Sriracha sauce
- 1/2 teaspoon kosher salt
- 4 cloves garlic, minced
Garlic Fried Rice Ingredients:
- 4 servings cooked Jasmine rice (1 cup uncooked)
- 1 tablespoon fish sauce
- 1 teaspoon soy sauce
- 6 gloves garlic, minced
- 2 tablespoons olive oil

I’ve never used beer to marinade my shrimp, but tequila works great with a squeeze of lime … LOL!
